– 2 lbs pork belly, skin removed
– 1 cup sake
– 1/2 cup soy sauce
– 1/4 cup brown sugar
– 4 cloves garlic, minced
– 1 inch fresh ginger, thinly sliced
– 2 green onions, chopped
– 1 tbsp vegetable oil
– Salt and pepper to taste
– Steamed rice and vegetables for serving

1. In a large pot, heat the vegetable oil over medium-high heat. Season the pork belly with salt and pepper, then add it to the pot.
2. Sear the pork belly on all sides until browned, about 5 minutes per side.
3. In a bowl, mix together the sake, soy sauce, brown sugar, garlic, and ginger. Pour this mixture over the pork belly in the pot.
4. Bring the liquid to a simmer, then reduce the heat to low and cover the pot.
5. Let the pork belly braise for 2-2.5 hours, turning it occasionally, until it’s tender and the sauce has thickened.
6. Once the pork belly is done, remove it from the pot and let it rest for a few minutes before slicing.
